Mish Mash

Adding the feta to the onions, peppers and tomatoes... mmm!
This is a fast, easy recipe that's delicious served with some crusty brown bread.
Ingredients
1 large onion, thinly chopped
3 medium tomatoes, skinned and chopped
4 or 5 sweet red peppers, char-roasted, peeled, seeded and chopped
A good hunk of crumbled feta cheese (at least 200g)
2 or 3 eggs, beaten
Olive oil
Chopped parsley
To cook:
Heat the olive oil in a pan, add the onion and cook gently until soft.
Add the tomatoes and peppers, stir well then let them cook for a couple of minutes.
Then pop in the feta cheese amd beaten eggs and stir the mish mash until the eggs and cheese are cooked - this should only take a couple more minutes.
Serve sprinkled with parsley and enjoy!
