Hummus is a creamy puree of chickpeas and tahini (sesame seed paste) It it usually seasoned with lemon or lemon juice and garlic.

These dips can be served as part of a appetizer platter; with bread, or vegetables for dipping or as a spread, even as a pita filling.

It helps to have a blender or food processor for these great recipes.

Avocado Hummus

I don't know about you, but I'm getting hungry already.

Let's get to the first hummus recipe!

Are you ready?

INGREDIENTS:

1 medium avocado, peeled, pitted and chopped, 1 cup canned chick peas or chickpeas (garbanzo beans), 1/3 cup chopped onion, 2 large cloves garlic minced (you can substitute 1/2 tsp. instant minced garlic for the minced fresh garlic), 3 Tbsp. lemon juice, 1 tsp. hot pepper sauce 1 tsp. ground cumin, 65 Crackers (I prefer ritz crackers)

Let's Put this dip together!

PLACE all ingredients except crackers in blender or food processor container; cover. Blend until smooth. Place in serving bowl and cover. Refrigerate at least 1 hour to allow flavors to blend. Top each cracker with a teaspoonful of avocado mixture. Serve immediately.

(note: Is much better if you refrigerate up to 3 hours before serving)

Artichoke Hummus Recipe

I don't know why I decided to do a recipe site because everytime I list a great recipe I'm ready to start cooking.

Thanks to our friends at Carpelli for this recipe.

Here's a twist. Use fresh artichoke hearts instead of the canned.

NOTE: When choosing fresh artichokes look for bright green artichokes with few blemishes.

Here's What You Need:

1 (15-ounce) can garbanzo beans, 1/2 cup canned artichoke hearts, 2 cloves garlic minced, 1/4 teaspoon lemon juice, 1/8 teaspoon each salt and pepper, 2 tablespoons Carapelli Premium Extra Virgin Olive Oil

Now What?

In bowl of food processor, combine garbanzo beans, artichoke hearts, garlic, lemon juice, salt and pepper. Process until mixture is smooth. Lightly drizzle olive oil into bean mixture. Process until combined. Cover and chill hummus for 1 hour to allow flavors to blend. Serve with pita wedges and vegetable dippers.
