Maryland Style Crab Cake

INGREDIENTS:
1 lb. Crabmeat, remove any shell fragments 1 cup cubed White Bread Crumbs 1 Egg Tabasco Sauce to taste 1 teaspoon Old Bay Seasoning 1/2 diced Red Pepper, sauteed in Olive Oil 3 Tbsp. Celery, diced fine 1 Tbsp. Worcestershire Sauce 1 teaspoon Colmans Dry Mustard 2 Tbsp. fresh Lemon Juice (note: adjust a little more or less depending on your taste of crab) 2 teaspoons Colmans Prepared Mustard 2 Tbsp. chopped Parsley 1 Tbsp. chopped Dill Weed 1 Tbsp. finely diced Shallots
Let's Cook:
Blend all ingredients except for Crabmeat and Bread Crumbs. Blend in Crabmeat and Bread Crumbs gently until incorporated. Do not overmix. Chill for one hour. Form into eight 3" x 3" patties and saute in olive oil until golden brown. Serve with Tartar Sauce or Cocktail Sauce.

Crab Cakes with Jasmine Rice

INGREDIENTS:
1 cup chicken broth 1 cup Jasmine Rice (uncooked) 2 eggs 2 cups crab (boned and flaked pick out the shells) 1/4 cup grated parmesan cheese 1/4 cup (1/2 stick) butter

Let's Cook
Bring broth to boil in small saucepan. Stir in rice cook according to directions. Fluff with fork.
Beat eggs lightly in medium bowl. Add rice, crabmeat and cheese; mix well. Shape equally into 8 crab cakes (patties). Let stand 5 minutes.
Melt butter in large skillet on medium heat. Add crab cakes; cook 5 minutes on each side or until brown on both sides and heated through.

INGREDIENTS:
1 medium lime 1 cup KRAFT Mayo Real Mayonnaise or MIRACLE WHIP Dressing, divided 1 envelope GOOD SEASONS Italian Salad Dressing & Recipe Mix 2 Tbsp. GREY POUPON Country Dijon Mustard 2 cans (6 oz. each) crabmeat, drained, flaked 25 finely crushed RITZ Crackers, divided 2 Tbsp. chopped green onion 1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
NOTE: The Grey Poupon gives it some kick!
Let's Cook:
GRATE the peel and squeeze the juice from the lime. Mix half of the lime juice, 1/2 cup of the mayo, salad dressing mix and mustard in medium bowl until well blended. Add crabmeat, 1/2 cup of the cracker crumbs and onion; mix lightly.
SHAPE into 18 (1/2-inch-thick) patties; coat with remaining cracker crumbs.COOK patties, in batches, in large nonstick skillet on medium heat 2 minutes on each side or until browned on both sides and heated through.
Meanwhile, mix remaining 1/2 cup mayo, remaining lime juice, lime peel and sour cream until well blended. Serve with crab cakes.
*Note - If using a regular skillet, cook crab cakes in 1 Tbsp. oil.
Serves: 18 1 crab cake each
