Shortbread Cookies, Gingerbread Cookies Double Chocolate Peanut Butter
Peanut Butter Meltaway CookiesThese peanut butter cookies will melt in your mouth. The peanut butter and chocolate chips give added flavor while the chocolate dip makes them look pretty inviting. These cookies hold their shape well and can be stored at room temperature for more than three weeks so they are a perfect choice to ship as gifts. By the way, used coffee cans are great for storing or shipping cookies! Thanks to home cooking.com and Peggy Trowbridge for this great peanut butter cookie.
INGREDIENTS:1 cup flour, 1/2 cup corn starch, 3/4 cup confection sugar, 3/4 cup butter (cut into cubes), 1/2 cup super chunky peanut butter (trust me on this), 1 teaspoon vanilla extract, 1/2 cup chocolate chips (use the miniture chips), Chocolate Dip 4 ounces semi-sweet chocolate bar broken in small chunks (room temperature setting is the best), 1 ounce paraffin (ie:Gulf Wax)
Let's Bake!Line cookie sheets with parchment paper or Silpat baking pad.In a small bowl, combine flour, corn starch, and sugar then set aside. Use a large bowl for: cream butter, peanut butter, and vanilla extract spoon or fork until smooth. Add flour mixture and begin mixing. (use low speed) Once mixture begins to get thick, increase speed to thoroughly mix until combined, scraping down sides. Scrape batter from beaters, and mix in chocolate chips with a large spoon. Refrigerate for 1 hour to firm up dough. Ready to bake? Good, preheat oven to 350 degrees F. Now, roll dough into 1-inch balls. Place 1-1/2 inches apart on lined baking sheet, and bake for 10 to 12 minutes until bottom edges just barely begin to turn brown. (don't over-bake) Cool on rack. Don't forget the Chocolate Dip: Place paraffin in a glass measuring cup and slowly melt it in the microwave. Add semisweet chocolate chunks and cook on high power about 15 seconds at a time, stirring each time, until chocolate is melted and thoroughly combined with the paraffin. Now dip each peanut butter meltaway cookie into chocolate about halfway, shake off excess chocolate, and place on trays lined with waxed paper or Silpats to set. Note: If chocolate begins to get too thick, re-warm very carefully. Refrigerate for an hour to set chocolate. Ingredients:2 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 cup butter softened, 1 cup brown sugar firmly packed, 1/2 cup white granulated sugar, 2 large eggs, 2 teaspoons vanilla extract, 2 cups semi-sweet chocolate chips, 1 cup chopped walnuts (only if you like walnuts)
Let's BakePreheat oven to 325 degrees.In a large bowl, combine flour, baking soda, and salt, with a wire whisk, and then set it aside. In a another large bowl, mix the butter, brown sugar, and white granulated sugar with an mixer to form a granular paste. Add eggs and vanilla extract then mix at medium speed until thoroughly mixed. Blend in the flour, next the chocolate chips (I like to add walnuts), at low speed until the ingredients are well distributed. Drop by rounded tablespoons onto ungreased cookie sheets. Bake for 17 to 18 minutes or until golden brown. Let stand for a minute or so, then remove cookies to wire racks or other cool surface with a spatula. SERVES about 3-4 dozen cookies Don't forget to check back often for more best cookie recipes.
