Almond Delights

This recipe can also be used to make a delicious pie crust. This is one of my favorite "What's for Dessert?" recipes handed down from a good friend of mine who made a batch of these tasty treats for me once upon a Christmas... hope you enjoy them as well!

1 C almonds, ground in blender
1 C whole wheat or white flour
1 C quick oats, blended dry
1/3 C oil
1/2 tsp. salt
1/3 C maple syrup

Roll dough into small balls and make a depression into each one with your thumb and fill with your favorite jam.

Bake at 325 degrees for 15-20 minutes or until golden brown.

This recipe can also be used to make a delicious pie crust.

Just shape into a pie plate and bake for the same amount of time as the cookies. Remove from oven and fill with your favorite fruit or cream pie filling. Chill and Enjoy!

Also makes a great crust for fruit pizza! It's easier to cut into desired serving pieces after baking. Let cool and cover with sweetened cream cheese or other favorite topping and add strawberry, kiwi and bluberries or any of your favorite fruit of choice.
